It’s Friday! I’m sitting in my hotel room in Greenville, South Carolina after keynoting the opening session of the South Carolina Association of Student Councils Convention–super fun! I hope you all have plans for a fun St. Patrick’s day weekend (yes, I will be wearing green for my workshops tomorrow and flight back to San Diego). Paleo Update
I’m just over three weeks into this Paleo diet. I became a bit more creative with the cooking this week and even ended up making a few sauces from scratch, allowing me to control the actual contents. The food was quite tasty. I only really struggle on the road. I’m surrounded by high sugar carbs in the airport and in advisor hospitality rooms at event. This Paleo aspect isn’t always convenient, but I definitely do feel better and my energy is improved. My TV & Internet habit tend to be the tougher habit to kick, but I made big strides this week by spending most of my extra free time reading. I finally got around to reading the Steve Jobs book and I’m over halfway done, having just started it on Tuesday. I’ve got a few more weeks to go. I think I’m definitely going to keep many aspects of the diet alive (my fish tacos in lettuce tortillas were pretty awesome) going when I’m done.
